Julie told me that there’s supposed to be some kind of Easter party tomorrow for the kiddies at preschool yesterday. So I decided to make something for snack time. A demented rabbit army.
Sushi rice is easy. Just make 1 cup of either brown or white rice. Then while that’s cooking, mix together 4 tbs seasoned rice vinegar, 2 tbs sugar, 3/4 tsp salt. Then dump it on the rice when it is done and stir well to mix. Chill, and then proceed to whatever it is you wanted to make from sushi rice.
I used a rectangle mold and used a peeler to make carrot ribbons that I trimmed down with kitchen sheers. Stuck the ears deep into the ice with a wooden skewer. Eyes are peas, nose is red roasted bell pepper.
The rest of the face I just stuck into the rice and I’m hoping it it sticky enough to hold it there.
Otherwise when I open my container there will be a blind rabbit army with pea eyeballs rolling around all over.
I’m debating making this for church coffee hour on Sunday. It was fast and easy. Though if I do, I’ll wrap the back half of the bodies in nori. I wasn’t sure the kids would eat seaweed but I know adults are more agreeable and it certainly would make the rabbit easier to hold.
